I have been feeling pretty experimental in the kitchen lately. Today I decided to make some healthy stuffed peppers.
Ingredients
-4 green peppers
-1 package of ground chicken
-1/2 red onion
-brown rice about 11/2 cups
-1 large can of diced tomatoes
-1/2 tablespoon of minced garlic
Preheat oven to 350
Make your rice according to package directions. Meanwhile brown ground chicken, add onions and garlic. Then add diced tomatoes and stir together.
Prepare your green peppers by cutting around the stem and cleaning out the inside of the peppers.
Add rice to your meat mixture and stir then use a spoon to add the mixture to the peppers.
Put them in the oven after filling is added for 45 minutes.

ReplyDeleteOh these look so good! We love stuffed peppers! I have only made them with rice, spaghetti sauce, hamburger, and mozzarella cheese. This would be a wonderful change for us to try!!!

Mmm,alright,I am so making these for dinner! Thanks for the great idea.I was in a bit of a funk here making the grocery list.
ReplyDeleteI love stuffed peppers but everybody else in my family hates peppers. It's a tragedy.
ReplyDeleteYum, I love stuffed bell peppers! My husband doesn't like onions or tomatoes, so we use bell peppers as a substitute a lot!
